Tilipia for Dinner

It was Sunday after church and my eldest son, age 10, says, "I don't know why, but I am craving fish for dinner". I was stunned! Finally, my subtle hints of eating healthy have paid off!

I immediately ran to the freezer and pulled out some Tilapia I had purchased earlier in the week and pulled a recipe out of my head and began to prepare our meal. It turned out delicious and my son exclaimed, "You need to make this again, Mom!"

Mission Accomplished!

Now onto my two other boys....They aren't as quick to jump on the Health Conscious bandwagon! I am starting to hide nutritional needs in their food, such as kale in their fruit smoothies, spinach and carrot puree in homemade brownies, and other pureed vegetables in kid-friendly food. I purchased "Deceptively Delicious" by Jessica Seinfeld a year ago, and am just now really getting into it. She has wonderful recipes in the book, all focused on getting better food in her children's bodies by adding pureed fruits and veggies to normal, everyday food.

My Current Craving...





I just thought I would quick jot down my latest craving when hunger pangs strike....Hummus.

I can't seem to get enough of it lately, and am finding all sorts of ways to incorporate it into my meals on a daily basis. It is so easy to prepare and I always have the ingredients on hand to prepare this simple, but healthy snack. My latest creation for lunch is an incredible veggie wrap. Today, I smeared a whole wheat tortilla with hummus, drizzled on honey from our local Farmers Market, added spinach and thinly sliced carrots for a perfect meal to get me through the rest of my crazy afternoon.

Following, is my recipe for Hummus, but feel free to tweak it just for you!

1 16 oz. can garbanzo beans, drained
2-3 tbsp. tahini (sesame paste)
3-4 tbsp. fresh lemon juice
2 cloves garlic, crushed
1/2 tsp. salt
2-3 tbsp. warm water
2-3 tbsp. olive oil

Blend in food processor, and voila, you are ready for healthy snacking! I drizzle a bit more olive oil and sprinkle with smoked paprika when making this for guests. Serve with pita triangles.

Warm up this Cccc...cold January


What better way to warm up, than with a healthy, comforting bowl of soup.

I received a crock pot for Christmas and am excited to use it to create wonderful, healthy meals for me and my family instead of the standard "meat and potato recipes" we all tend to associate with the crock pot. This January, my New Years Resolution is to maintain a healthy lifestyle and hopefully my children will see how easy it can be and follow in my footsteps. I am a firm believer in teaching with actions, not words.

I found this recipe for Vegetarian Lentil Soup that is easy to make and warms you from the inside out! Put in together in the morning before work and it will be ready for your family when the work ans school day is over!
